Grilled Vegetable Skewers
A colorful and healthful side dish perfect for summer barbecues!
Ingredients:
- 1 red bell pepper, cut into 2-inch pieces
- 1 yellow bell pepper, cut into 2-inch pieces
- 1 orange bell pepper, cut into 2-inch pieces
- 1 zucchini, cut into 2-inch pieces
- 1 yellow squash, cut into 2-inch pieces
- 1/2 red onion, cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder (optional)
- 2 tablespoons balsamic vinegar
Instructions:
- Preheat grill to high heat.
- In a large bowl, toss the vegetables with olive oil, salt, black pepper, paprika, garlic powder, and chili powder (if using).
- Thread the vegetables onto skewers, alternating colors for a vibrant presentation.
- Grill skewers for 8-10 minutes, turning occasionally, until vegetables are charred slightly and tender.
- Drizzle with balsamic vinegar before serving.
- Garnish with fresh herbs (if using).
- Serve hot or at room temperature.
