Grilled Vegetable Skewers

A colorful and healthful side dish perfect for summer barbecues!

Ingredients:

  • 1 red bell pepper, cut into 2-inch pieces
  • 1 yellow bell pepper, cut into 2-inch pieces
  • 1 orange bell pepper, cut into 2-inch pieces
  • 1 zucchini, cut into 2-inch pieces
  • 1 yellow squash, cut into 2-inch pieces
  • 1/2 red onion, cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder (optional)
  • 2 tablespoons balsamic vinegar

Instructions:

  1. Preheat grill to high heat.
  2. In a large bowl, toss the vegetables with olive oil, salt, black pepper, paprika, garlic powder, and chili powder (if using).
  3. Thread the vegetables onto skewers, alternating colors for a vibrant presentation.
  4. Grill skewers for 8-10 minutes, turning occasionally, until vegetables are charred slightly and tender.
  5. Drizzle with balsamic vinegar before serving.
  6. Garnish with fresh herbs (if using).
  7. Serve hot or at room temperature.
